If we have a signature cheese, this is it!  Tomme de Vallée is a traditional French Alpine cheese with nutty and earthy flavors.  Cory fell in love with this variety while he was apprenticing in France. He brought the farmstead recipe home where he refined it and made it his own.

Pieces are cut to approximately 150g and are presented in cheese shop paper.

Milk: Unpasteurized goats’ milk
Age: 4-6 months
